Preparing the Beef Brisket

Sear the Brisket
In a large skillet, heat olive oil over medium-high heat. Season the beef brisket with salt, black pepper, onion powder, garlic powder, and smoked paprika. Sear the brisket in the skillet for 3-4 minutes on each side until browned.

Cook the Brisket
Transfer the seared brisket to a slow cooker. Pour the beef broth over the brisket. Cover and cook on low for 8 hours or until the brisket is tender and easily shreds with a fork.

Shred the Beef
Once cooked, remove the brisket from the slow cooker and let it rest for about 10 minutes. Shred the beef using two forks.

Slice the sandwich rolls in half and lightly toast them if desired.

On the bottom half of each roll, place a generous amount of shredded brisket. Drizzle barbecue sauce over the beef, then add pickles and coleslaw on top.
