    Make the Dough

    In a mixing bowl, combine all-purpose flour and water. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

    Prepare the Filling

    In a separate bowl, combine ground pork, green onions, ginger, soy sauce, sesame oil, salt, and pepper. Mix thoroughly until well combined.

    Form the Potstickers

    Divide the rested dough into small pieces and roll each piece into a thin circle (about 3 inches in diameter). Place about 1 tablespoon of filling in the center of each circle. Moisten the edges with water, fold the dough over the filling, and pinch to seal tightly.

    Cook the Potstickers

    Heat a non-stick skillet over medium-high heat and add a tablespoon of oil. Place the potstickers in the skillet in a single layer. Fry for about 2-3 minutes or until the bottoms are golden brown. Add 1/4 cup of water to the skillet and cover immediately. Allow to steam for about 5 minutes until cooked through. Remove the lid and cook for an additional 2 minutes to re-crisp the bottoms.

    Serve the potstickers hot with your choice of dipping sauce.
