    Prepare the Beef

    In a large pot, add the beef shank, cover with water, and bring to a boil. Reduce to a simmer and cook for 1.5 to 2 hours or until tender.

    Make the Broth

    Remove the beef shank and set aside. In the same pot, add the beef broth, tomato paste, soy sauce, minced garlic, and grated ginger. Bring to a simmer.

    Add Carrots

    Chop the cooked beef into bite-sized pieces and return it to the pot. Add chopped carrots and cook for an additional 20 minutes until the carrots are tender.

    Season the Soup

    Season the soup with salt and black pepper to taste.

    Prepare the Noodles

    While the soup is simmering, prepare your house-made noodles according to your preferred recipe or package instructions.

    Serve the Soup

    In a bowl, place a serving of noodles, ladle the hot soup over the noodles, and top with cilantro, pickled veggies, and spring greens.
