Marinate the Chicken

In a large bowl, combine buttermilk, chopped jalapeño, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Spicy Flour Coating

Prepare the Coating

In a separate bowl, mix together all-purpose flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Set aside.

Chipotle Aioli

Make the Chipotle Aioli

In a mixing bowl, whisk together mayonnaise, minced chipotle, lime juice, and minced garlic until smooth. Adjust seasoning to taste. Refrigerate until ready to use.

Spicy Napa Slaw

Prepare the Slaw

In a large bowl, combine shredded Napa cabbage, shredded carrot, sliced jalapeño, rice vinegar, honey, salt, and black pepper. Toss well to combine and let it sit for at least 30 minutes before serving.

Frying the Chicken

Fry the Chicken

Heat cooking oil in a large pot or deep fryer to 350°F (175°C). Remove the marinated chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the spicy flour mixture, making sure to coat thoroughly. Fry chicken in batches for 6-8 minutes, or until golden brown and cooked through. Drain on paper towels.

Assemble the Sandwich

Lightly grill ciabatta slices until toasted. Spread chipotle aioli on the bottom slice, add crispy fried chicken, top with spicy Napa slaw, dill pickles, and finish with the top slice of ciabatta. Serve immediately.
