    Cook the Linguine

    Bring a large pot of salted water to boil. Add the linguine noodles and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Butternut Squash

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced butternut squash and season with salt and black pepper. Sauté for about 10-12 minutes until the squash is tender and slightly caramelized. Remove from skillet and set aside.

Cooking the Shrimp

    Sauté the Shrimp

    In the same skillet, add another tablespoon of olive oil. Once hot, add the shrimp. Season with salt, black pepper, and red chili flakes. Cook for 2-3 minutes on each side until the shrimp are pink and cooked through. Remove the shrimp from the skillet and set aside.

    Sauté the Aromatics

    In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and shallots. Sauté for 1-2 minutes until fragrant. Add the diced red bell pepper and cook for an additional 3-4 minutes until softened.

Combining Ingredients

    Combine Everything

    Add the cooked butternut squash, shrimp, and fresh spinach to the skillet. Toss everything together until the spinach wilts. Add the cooked linguine noodles and grated Reggiano cheese. Toss until everything is well combined and the cheese melts.

    Finish and Serve

    Remove from heat and stir in the chopped fresh basil. Adjust seasoning with salt and black pepper if necessary. Serve immediately, garnished with additional Reggiano cheese and basil, if desired.
