Grilled Atlantic Salmon

Prepare the Salmon

Preheat your grill to medium-high heat. Pat the salmon fillets dry with paper towels. Brush both sides of the fillets with olive oil and season with salt, black pepper, and fresh lemon juice.

Grill the Salmon

Place the salmon fillets on the grill, skin-side down. Grill for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork. Remove from grill and set aside.

Prepare the Garlic

While the salmon is grilling, melt the unsalted butter in a small saucepan over medium heat. Add the minced garlic and sauté for about 2-3 minutes until fragrant but not browned.

Mix in Herbs

Remove from heat and stir in chopped parsley, thyme, salt, and black pepper. Set aside to cool slightly.

Jasmine Cilantro Rice

Cook the Rice

In a medium saucepan, bring water to a boil. Add jasmine rice and salt, reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked and water is absorbed.

Add Cilantro

Remove from heat and fluff rice with a fork. Stir in chopped cilantro and mix well.

Seasonal Vegetables

Prepare the Vegetables

In a large bowl, toss the mixed seasonal vegetables with olive oil, salt, and black pepper.

Cook the Vegetables

Grill the vegetables on medium-high heat for about 5-7 minutes, turning occasionally, until they are tender and have grill marks.
