Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, approximately 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Remove the potatoes from the water, pat them dry with paper towels, and fry them in batches for about 5-6 minutes or until golden brown. Drain on paper towels and sprinkle with salt and paprika.

Cooking the Steak

    Prepare the Steak

    Rub the ribeye or sirloin steaks with olive oil, garlic powder, salt, and black pepper. Let them sit for about 15 minutes to bring them to room temperature.

    Cook the Steak

    Heat a skillet or grill over medium-high heat. Once hot, add the steaks and cook for 4-5 minutes per side for medium rare, depending on the steak thickness. Use a meat thermometer to check for desired doneness (130°F for medium rare).

    Rest the Steak

    Remove the steaks from the heat and let them rest for about 5 minutes before slicing. This helps the juices redistribute.

Serving

    Plate the Dish

    Slice the rested steak against the grain and serve alongside the crispy fries. You can garnish with fresh herbs if desired.
