Preparation of Pico de Gallo

Make the Pico de Gallo
In a bowl, combine the diced tomatoes, diced onion, chopped cilantro, lime juice, and salt. Mix well and set aside for flavors to meld.

Cook the Eggs
In a frying pan, heat 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the pan and cook until the whites are set and the yolks are still runny, about 3-4 minutes. Remove from heat and set aside.
Assembling Huevos Rancheros

Heat the Tortillas
In the same pan, add another tablespoon of vegetable oil and heat over medium heat. Lightly fry the corn tortillas for about 30 seconds on each side until warm and slightly crispy.

Layer the Ingredients
On each tortilla, spread half a cup of refried beans. Top with half a cup of shredded cheddar cheese. Place a cooked egg on top of each tortilla.

Add Pico de Gallo
Spoon the prepared pico de gallo generously over the eggs and cheese.
Serving

Serve Immediately
Serve the huevos rancheros hot, garnished with additional cilantro if desired.
