    Prepare the Ingredients

    Wash and peel the potatoes, then dice them into small cubes. Chop the onion, bell pepper, and garlic finely.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove and place on a paper towel to drain. Leave the drippings in the skillet.

    In the same skillet with the bacon drippings, add olive oil if needed. Add the diced potatoes, onion, and bell pepper. Sauté for about 10-15 minutes until the potatoes are tender and golden brown, stirring occasionally.

    Add the minced garlic, ground beef or sausage, salt, black pepper, paprika, and dried oregano to the skillet. Mix well and cook until the meat is browned, about 5-7 minutes.

    Crumble the cooked bacon into the hash and stir to combine. Cook for an additional 2-3 minutes to heat through.
