Cook Tater Tots
Preheat your oven according to the package instructions for the tater tots. Spread the tater tots in a single layer on a baking sheet and bake until golden brown and crispy, about 20-25 minutes, flipping halfway through.

Cook Ham and Vegetables
In a large skillet over medium heat, add the diced ham, green bell pepper, and onion. Sauté for about 5-7 minutes, or until the vegetables are tender.

Combine Tater Tots with Ham and Veggies
Once the tater tots are done, add them to the skillet with the ham and vegetable mixture. Stir to combine and let them cook together for an additional 3-5 minutes to heat through.

Add Cheese
Sprinkle the shredded cheddar cheese over the tater tot mixture. Cover the skillet with a lid and let it sit for 2-3 minutes, or until the cheese is melted.

Cook Sausage
In a separate saucepan, cook the breakfast sausage over medium heat until browned and cooked through, about 5-7 minutes. Break it up into small pieces as it cooks.

Sprinkle the flour over the cooked sausage and stir to coat evenly. Gradually add the milk while whisking to prevent lumps. Continue to cook and stir until the gravy thickens, about 3-5 minutes. Season with salt and black pepper.

Assemble the Dish
To serve, place a generous scoop of the tater tot mixture on a plate. Top with the sausage gravy, and carefully place the sunny-side-up eggs on top. Serve with the toasted bread on the side.
