    Prepare the Eggs

    In a medium bowl, crack the eggs and season with salt and pepper. Heat a skillet over medium heat and add butter. Once melted, pour in the eggs and cook to your preferred style (scrambled, fried, or poached). Remove from heat and set aside.

Biscuit

    Make the Biscuits

    Preheat the oven to 450°F (230°C). In a large bowl, whisk together flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in milk until just combined. Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out biscuits. Place on a baking sheet and bake for 10-12 minutes or until golden brown.

Sausage Patties

    Cook the Sausage Patties

    In a bowl, mix ground pork sausage, sage, black pepper, and salt until well combined. Form into small patties. In a skillet over medium heat, cook the patties for about 4-5 minutes on each side or until browned and cooked through. Remove and keep warm.

Sausage Gravy

    Prepare the Sausage Gravy

    In the same skillet used for the sausage patties, add ground pork sausage and cook over medium heat until browned. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk, stirring constantly, until the gravy thickens. Season with black pepper and salt. Serve warm over sausage patties.
