Prepare Home Fries

    Cook the Potatoes

    In a large skillet, heat a tablespoon of oil over medium heat. Add diced potatoes and season with salt and pepper. Cook for about 15-20 minutes, stirring occasionally, until golden brown and tender.

    Season and Finish

    Once cooked, you can add chopped onions or bell peppers if desired. Cook for an additional 2-3 minutes, then remove from heat.

Prepare Burrito Filling

    Scramble the Eggs

    In a bowl, whisk together the eggs with a pinch of salt and pepper. In a non-stick skillet, scramble the eggs over medium heat until fully cooked, about 5-7 minutes.

    Combine Ingredients

    In the same skillet, add the cooked bacon, shredded cheddar cheese, and diced avocado to the scrambled eggs. Stir until the cheese is melted and all ingredients are well combined.

Assemble the Burrito

    Layer the Filling

    Place a large tortilla wrap on a flat surface. Spoon a portion of the home fries in the center of the wrap, followed by the egg mixture.

    Wrap the Burrito

    Fold the sides of the tortilla inwards, then roll from the bottom up to form a tight burrito. Repeat with the second tortilla.

Serve

    Presentation

    Cut the burrito in half diagonally and serve with salsa and sour cream on the side, if desired.
