    Prepare the Eggs

    Crack the eggs into a bowl. Add salt and pepper to taste. Whisk gently until combined.

    Cook the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour the beaten eggs into the skillet. Cook until the edges begin to set, then gently lift the edges with a spatula to allow uncooked egg to flow underneath. Cook until the desired doneness is reached.

    Prepare the Potatoes

    Wash and dice the potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 5-7 minutes until slightly tender. Drain and set aside.

    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add diced onion and bell pepper. Sauté for about 3-4 minutes until softened.

    Combine and Cook the Home Fries

    Add the drained potatoes to the skillet with the onions and bell peppers. Sprinkle with paprika, garlic powder, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy.

    Toast the Bread

    While the eggs and home fries are cooking, toast the slices of bread to your liking. Once toasted, spread 1 tablespoon of butter on each slice.
