Preparing the Toast Base

    Toast the Bread

    Toast the whole grain bread slices until golden brown and crisp. Set aside.

Cooking the Eggs and Preparing Toppings

    Fry the Eggs

    In a skillet, heat a small amount of oil over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks remain runny, about 2-3 minutes. Season with salt and black pepper.

    Prepare the Avocado and Tomato

    While the eggs are cooking, slice the avocado and tomato. Season them with a pinch of salt.

Making the Jalapeno Hollandaise Sauce

    Prepare the Sauce

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Whisk continuously until the mixture thickens, about 3-5 minutes.

    Slowly drizzle in the melted butter while whisking constantly. Stir in the chopped jalapeno, salt, and cayenne pepper. Continue whisking until the sauce is smooth and creamy.

Assembling the Breakfast Toast

    On each slice of toasted bread, layer the sliced avocado and tomato. Top with the sunny-side-up eggs and drizzle generously with jalapeno hollandaise sauce. Serve immediately.
