Two eggs topped with swiss cheese, sauerkraut, sliced corn beef and thousand island dressing on a toasted English. Served with your choice of a side.

Toast the English Muffin
Split the English muffin in half and toast it until golden brown.

Prepare the Eggs
In a non-stick skillet, crack the 2 eggs and cook them to your desired doneness (sunny side up, over easy, etc.).

Warm the Sauerkraut
In a small saucepan, heat the sauerkraut over medium heat for about 2-3 minutes until warmed through.

Assemble the Rueben
On each half of the toasted English muffin, layer the corned beef slices, warmed sauerkraut, and a slice of Swiss cheese.

Melt the Cheese
Place the assembled muffin halves under a broiler for about 1-2 minutes to melt the cheese.

Add the Eggs
Once the cheese is melted, carefully place the cooked eggs on top of the melted cheese.

Finish with Dressing
Drizzle the Thousand Island dressing over the eggs.
