Crust Preparation

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are well coated and the mixture resembles wet sand.

    Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake in the preheated oven for 10 minutes. Remove from the oven and let cool.

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar, beating until well combined.

    Add the vanilla extract, sour cream, and lemon juice to the cream cheese mixture. Beat until smooth. Add the eggs one at a time, mixing well after each addition.

    Pour the filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour.

    While the cheesecake cools, prepare the strawberries. In a medium bowl, combine the sliced strawberries and granulated sugar. Toss gently to coat and let sit for about 15-20 minutes until the strawberries release their juices.
