Method
Making the Pastry Dough
Prepare Ingredients
Gather all the ingredients for the pastry dough and ensure the butter is cold and cut into small cubes.
Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined.
Incorporate Butter
Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingertips, mix until the mixture resembles coarse crumbs.
Add Egg Yolks and Water
Stir in the egg yolks and cold water gradually. Mix until the dough comes together. If too dry, add more cold water, 1 tablespoon at a time.
Chill the Dough
Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preparing the Fillings
Make Cream Cheese Filling
In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
Prepare Fresh Fruit
Wash and slice the fresh fruit as needed for filling the pastries.
Assembling the Pastries
Preheat Oven
Preheat your oven to 375°F (190°C).
Roll Out Dough
On a floured surface, roll out the chilled pastry dough to about 1/4 inch thick.
Cut Shapes
Use a pastry cutter or knife to cut out desired shapes for the pastries (e.g., circles, squares).
Fill Pastries
Place a spoonful of cream cheese filling and a few pieces of fruit or chocolate chips in the center of each pastry shape.
Seal Pastries
Fold the pastry over the filling and pinch the edges to seal. Use a fork to crimp the edges if desired.
Sprinkle Toppings
If desired, sprinkle the tops with sprinkles.
Baking the Pastries
Bake
Place the pastries on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until golden brown.
Cool and Serve
Once baked, remove from the oven and allow to cool on a wire rack before serving.
