Method

Dough Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, salt, sugar, and instant yeast until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, warm the milk and water until lukewarm. Add the melted butter and mix thoroughly.

  3. 3

    Form the Dough

Pour the wet ingredients into the dry mixture and stir until a rough dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.

  4. 4

    First Rise

Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for 1 to 1.5 hours or until doubled in size.

Laminating Butter

  1. 5

    Prepare Butter Layer

While the dough is rising, take the 1 cup of unsalted butter for laminating and place it between two sheets of parchment paper. Using a rolling pin, pound and roll it into a 1/2 inch thick square. Refrigerate until firm.

Lamination Process

  1. 6

    Incorporate Butter

Once the dough has risen, turn it out onto a floured surface and roll it into a rectangle (about 16x10 inches). Place the chilled butter square in the center of the rectangle.

  2. 7

    Fold the Dough

Fold the dough over the butter, enclosing it completely. Pinch the edges to seal. Roll the dough into a larger rectangle (about 24x10 inches).

  3. 8

    First Fold

Fold one-third of the dough over the middle third, then fold the remaining third on top. Wrap in plastic wrap and refrigerate for 30 minutes.

  4. 9

    Repeat the Process

Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each fold.

Shaping and Final Rise

  1. 10

    Shape Croissants

After the final fold, roll the dough into a large rectangle (about 24x12 inches). Cut the dough into triangles (about 4 inches wide at the base). Roll each triangle from the base to the tip to form the croissant shape.

  2. 11

    Second Rise

Place the shaped croissants on a baking sheet lined with parchment paper. Cover and let rise for about 1 hour or until puffy.

Baking

  1. 12

    Preheat Oven

Preheat your oven to 400°F (200°C).

  2. 13

    Bake Croissants

Brush the croissants with an egg wash (1 beaten egg mixed with 1 tbsp water) for a shiny finish. Bake in the preheated oven for 15-20 minutes or until golden brown.

  3. 14

    Cool and Serve

Remove from the oven and let cool slightly before serving. Enjoy your freshly baked croissants!
