Egg Preparation

    Scramble the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Cook the Eggs

    In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and cook, stirring gently, until the eggs are scrambled and fully cooked, about 3-5 minutes. Remove from heat.

Filling Preparation

    Cook the Sausage or Bacon

    If using sausage, crumble it and cook in the same skillet over medium heat until browned, about 5-7 minutes. If using bacon, cook until crispy, then chop into bits. Remove from heat.

    Sauté the Vegetables

    In the same skillet, add chopped onion and bell pepper. Sauté for about 3-4 minutes until the vegetables are soft.

    Combine Fillings

    Add the cooked sausage or bacon and scrambled eggs to the skillet with sautéed vegetables. Mix well and add the cheddar cheese, allowing it to melt slightly.

Assembly

    Warm Tortillas

    In a separate skillet or microwave, warm the flour tortillas for about 10-15 seconds until pliable.

    Fill the Tortillas

    Place a generous scoop of the egg and filling mixture onto the center of each tortilla.

    Wrap the Burrito

    Fold in the sides of the tortilla and then roll it tightly from the bottom to the top to secure the filling.

    Serve

    Cut the burrito in half if desired and serve hot, optionally with salsa or hot sauce.
