Sourdough Bread Preparation

Mix the Dough
In a large mixing bowl, combine the active sourdough starter, water, and 2 cups of all-purpose flour. Stir until well combined.

Add Flour and Salt
Gradually add the remaining flour and salt, mixing until a shaggy dough forms. You may need to adjust the flour quantity slightly based on your dough's consistency.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours, or until doubled in size.

Shape the Dough
After the first rise, gently deflate the dough and shape it into a round loaf. Place it seam-side down in a floured proofing basket or bowl.

Second Rise
Cover the shaped dough and let it rise for another 2-3 hours at room temperature or in the refrigerator overnight for a slower fermentation.

Preheat the Oven
Preheat your oven to 450°F (230°C) about 30 minutes before baking. Place a Dutch oven or baking stone inside to heat up.

Bake the Bread
Carefully transfer the dough to the hot Dutch oven or baking stone. Score the top with a sharp knife and cover with a lid (or use steam). Bake for 30 minutes, then remove the lid and bake for an additional 15-20 minutes until golden brown.

Remove the bread from the oven and let it cool on a wire rack for at least 1 hour before slicing.
