    Prepare the Duck

    Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Sear the Duck

    In a cold skillet, place the duck breasts skin-side down. Turn the heat to medium and allow the fat to render, cooking for about 6-8 minutes until the skin is golden brown and crispy.

    Add Aromatics

    Add minced garlic and thyme to the skillet, spooning some of the rendered fat over the breasts for added flavor.

    Roast in Oven

    Transfer the skillet to a preheated oven at 400°F (200°C) and roast for about 8-10 minutes for medium-rare doneness.

    Rest and Glaze

    Remove the duck from the oven and let it rest for 5 minutes. Drizzle with honey before slicing.
