1. Activate the Yeast

In a small bowl, mix warm water and sugar. Sprinkle the active dry yeast on top and let it sit for about 5-10 minutes until it becomes frothy.

2. Mix the Dough

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

3. Knead the Dough

Turn the dough out onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

4. Let the Dough Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

5. Prepare the Spinach

In a large skillet, sauté the minced garlic in a little olive oil until fragrant. Add the chopped spinach and cook until wilted. Season with nutmeg, salt, and pepper.

6. Mix the Filling

In a bowl, combine the ricotta cheese, sautéed spinach, mozzarella cheese, and parmesan cheese. Mix well until all ingredients are combined.

7. Preheat the Oven

Preheat your oven to 375°F (190°C).

8. Shape the Dough

Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a large circle, about 1/4 inch thick.

9. Fill the Dough

Cut the dough into wedges (like a pizza). Place a generous spoonful of the filling at the wide end of each wedge and roll it towards the point to form a crescent shape.

10. Prepare for Baking

Place the filled crescents on a baking sheet lined with parchment paper. Brush the tops with beaten egg and sprinkle with sesame seeds.

11. Bake
