Marinate the Chicken
In a large bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, making sure they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

In a separate bowl, mix the all-purpose flour and cornstarch. This will be used to coat the marinated chicken.

In a large, deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature.

Coat the Chicken
Remove the chicken from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour and cornstarch mixture, ensuring they are evenly coated.

Carefully place the coated chicken thighs in the hot oil. Fry for about 8-10 minutes on each side or until golden brown and cooked through. Use a meat thermometer to check for an internal temperature of 165°F (75°C).
