    Prepare the Short Rib

    Preheat your oven to 300°F (150°C). Season the short rib with salt and pepper. Place it in a roasting pan and cover it with foil. Roast for about 3 hours, or until tender.

    Cook the Bacon

    Cook the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain.

    Toast the Bread

    In the same skillet, lightly toast the marble rye bread until golden brown on both sides.

    Assemble the Reuben

    Spread 1000 Island dressing on one slice of toasted marble rye. Layer with Swiss cheese, shredded short rib, pickled jalapenos, apple sauerkraut, and horseradish aioli. Top with another slice of rye. Repeat for the other sandwich.

    Grill the Sandwiches

    Heat the skillet over medium-low heat. Place the sandwiches in the skillet and press down slightly. Grill until the cheese is melted and the bread is golden brown, about 4-5 minutes per side.

    Slice the sandwiches in half, serve hot, and enjoy your Reuben with a side of pickles or chips.
