Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thick fries or wedges.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Remove the fries from the water and pat them dry. Fry them in batches until golden brown, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, grated Parmesan cheese, and chopped parsley.
