Burger Patty Preparation

    Prepare the Patty Mixture

    In a large bowl, combine the cooked white beans, mashed sweet potato, diced red pepper, minced jalapeno, cooked quinoa, panko breadcrumbs, ground cumin, salt, and pepper. Mix until well combined.

    Form the Patties

    Divide the mixture into 4 equal portions and shape each portion into a patty.

    Cook the Patties

    In a non-stick skillet over medium heat, cook the patties for about 4-5 minutes on each side or until golden brown.

Curried-Carrot Hummus Preparation

    Blend Ingredients

    In a food processor, combine the cooked carrots, tahini, lemon juice, ground curry powder, minced garlic, water, and salt. Blend until smooth and creamy.

Maple Tahini Sauce Preparation

    Mix the Sauce

    In a small bowl, whisk together tahini, maple syrup, lemon juice, water, and salt until smooth.

Assembly

    Assemble the Burger

    Spread a generous layer of curried-carrot hummus on the bottom half of each vegan bun. Place the cooked patty on top, drizzle with maple tahini sauce, and top with micro greens. Cover with the top half of the bun.
