    Prepare the Oven

    Preheat your oven to 425°F (220°C).

    Roast the Corn

    In a skillet, heat olive oil over medium heat. Add corn kernels and season with chili powder, cumin, salt, and black pepper. Sauté for about 5-7 minutes until the corn is slightly charred.

    Bake Tater Tots

    Spread the frozen tater tots on a baking sheet and bake according to package instructions until golden and crispy, usually about 20-25 minutes.

    Combine Ingredients

    In a large mixing bowl, combine the roasted corn, habanero cheddar cheese, and Hemme Bros. cheddar cheese. Stir well.

    Assemble Elote Tots

    Once the tater tots are done, remove them from the oven and immediately top with the corn and cheese mixture. Return to the oven for an additional 5 minutes, until the cheese is melted.

    Remove from the oven and sprinkle with crumbled queso fresco, pickled red onions, and fresh cilantro before serving.
