Instructions

  1. 1

    Prepare the Avocados

Cut the avocados in half, remove the pit, and slice each half into wedges.

  2. 2

    Tempura Battering

In a mixing bowl, combine the tempura batter mix with water until smooth. Dip each avocado wedge into the batter, ensuring it's fully coated.

  3. 3

    Fry the Avocados

In a deep pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the battered avocado wedges and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

  4. 4

    Warm the Tortillas

In a separate skillet, warm the corn tortillas on medium heat for about 30 seconds on each side until pliable.

  5. 5

    Assemble the Tacos

Spread a layer of refried black beans on each tortilla, top with the tempura fried avocado, and add queso fresco, pico de gallo, sliced jalapenos, and drizzle with salsa verde.

  6. 6

    Serve

Serve the tacos immediately while warm, garnished with extra pico de gallo and salsa verde on the side.
