Bruschetta Ingredients

Method

Preparation Directions

1

Make the Tomato Jam

In a saucepan, combine diced tomatoes, sugar, and balsamic vinegar. Cook over medium heat until the mixture thickens and becomes jam-like, about 20-25 minutes. Stir occasionally and season with salt and pepper to taste.

2

Prepare the Basil Pesto

In a food processor, combine fresh basil, pine nuts, garlic, olive oil, and a pinch of salt. Blend until smooth. Adjust seasoning to taste.

3

Toast the Crostini

Preheat the oven to 400°F (200°C). Slice the baguette into 1/2 inch slices and arrange them on a baking sheet. Brush each slice with olive oil and bake for 8-10 minutes or until golden brown and crispy.

4

Assemble the Bruschetta

Spread a layer of goat cheese on each toasted crostini. Top with a spoonful of house-made tomato jam and a drizzle of basil pesto. Serve immediately.
