Prepare Tartar Sauce

In a bowl, combine mayonnaise, dill pickles, lemon juice, capers, fresh dill, salt, and black pepper. Mix well and refrigerate.

Prepare Potatoes

Peel the potatoes and cut them into thick fries. Rinse in cold water and dry thoroughly with paper towels.

Cook the Fries

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt.

Prepare Beer Batter

In a bowl, whisk together flour, baking powder, salt, and black pepper. Gradually add beer until the batter is smooth and thick.

Fry the Fish

Dip each cod fillet into the beer batter, allowing excess to drip off. Carefully place in the hot oil and fry for about 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Serve

Serve the fish and chips hot, with grilled lemon on the side and the tartar sauce for dipping.
