Prepare the Green Tomatoes

Slice the green tomatoes into 1/4 inch thick slices. Season with salt and black pepper.

Prepare the Breading Station

Set up three bowls: one with flour, one with beaten eggs, and one with a mixture of cornmeal, salt, and pepper.

Bread the Tomatoes

Dredge each tomato slice in flour, dip in the beaten eggs, then coat in the cornmeal mixture. Set aside.

Fry the Tomatoes

In a large pan, heat vegetable oil over medium heat. Fry the breaded tomato slices until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Fry the Mozzarella

Cut the fresh mozzarella into thick slices. Repeat the breading process as done for the tomatoes. Fry in the same oil until golden and crispy, about 2-3 minutes per side. Drain on paper towels.

Assemble the Fried Caprese

On a serving plate, layer the fried green tomatoes, followed by the fried mozzarella. Drizzle with pesto sauce and balsamic glaze. Garnish with fresh basil leaves.
