Prepare the Risotto
Begin by cooking the mushroom risotto according to package instructions or your favorite recipe. Keep warm while you prepare the salmon.

Sear the Salmon
In a large skillet over medium-high heat, add olive oil. Season the salmon fillets with salt and pepper. Once the oil is hot, add the salmon and sear for 4-5 minutes on each side until cooked through and golden brown. Remove from skillet and set aside.

Make the Sauce
In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add spinach and sun-dried tomatoes, cooking until the spinach wilts. Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and combined. Season with additional salt and pepper to taste.

Combine and Serve
Return the seared salmon to the skillet, spoon the creamy spinach sun-dried tomato sauce over the top, and allow to heat through for 1-2 minutes. Serve the salmon alongside the mushroom risotto.
