Prepare the Broth

In a medium saucepan, heat the vegetable broth over medium heat. Keep it warm on low heat while you prepare the risotto.

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for another minute until fragrant.

Begin adding the warm vegetable broth, one ladle at a time, to the rice mixture. Stir continuously and wait until most of the liquid is absorbed before adding the next ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.
