Marinate the Chicken
In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the chicken breasts and coat well. Cover and marinate in the refrigerator for at least 30 minutes.
Grill the Chicken
Preheat your grill to medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). During the last minute of grilling, place a slice of provolone cheese on each chicken breast to melt.
Prepare the Sandwich
Toast the brioche buns on the grill for about 1-2 minutes until golden. Assemble the sandwich by placing the grilled chicken with melted cheese on the bottom bun, followed by lettuce, tomato slices, and a generous spread of red pepper aioli. Top with the other half of the bun.
Serve
Serve immediately while hot, and enjoy your delicious grilled chicken sandwich!
