Directions

  1. 1

    Prepare the Potatoes

Wash the baby potatoes thoroughly and place them in a large pot. Fill the pot with enough water to cover the potatoes completely. Add a pinch of salt to the water.

  2. 2

    Boil the Potatoes

Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.

  3. 3

    Preheat the Oven

While the potatoes are boiling, preheat your oven to 425°F (220°C).

  4. 4

    Draining and Smashed

Once the potatoes are cooked, drain them and let them cool for a few minutes. On a lined baking sheet, place the potatoes and gently smash each one with a fork until they are flattened but still in one piece.

  5. 5

    Seasoning the Potatoes

In a small bowl, mix together the olive oil, minced garlic, chopped parsley, chopped rosemary, salt, and black pepper. Brush this mixture over the smashed potatoes generously.

  6. 6

    Baking

Place the baking sheet in the preheated oven and bake the potatoes for 20-25 minutes, or until they are golden brown and crispy.

  7. 7

    Serving

Remove the potatoes from the oven, let them cool slightly, and serve warm as a delicious side dish.
