    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it rest at room temperature for 30 minutes. Pat dry with a paper towel.

    Season the Steak

    Generously season both sides of the filet mignon with salt and black pepper.

    Heat the Pan

    In a heavy skillet, heat the olive oil over medium-high heat until it's shimmering.

    Sear the Steak

    Add the filet mignon to the skillet. Sear for 4-5 minutes on the first side, until a golden-brown crust forms.

    Flip and Add Flavorings

    Flip the steak and add crushed garlic cloves and a sprig of fresh rosemary to the skillet. Continue cooking for another 4-5 minutes for medium-rare, basting with the oil and juices.

    Finish with Butter

    In the last minute of cooking, add the butter to the pan. Spoon the melted butter over the steak for added richness.

    Rest and Serve

    Remove the steak from the skillet and let it rest for 5 minutes before slicing. Serve immediately.
