Caramelize the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized, about 30-40 minutes.

Add Stock and Seasoning

Add the beef stock, thyme, black pepper, and additional salt to the pot. Bring the mixture to a simmer, and cook for another 20 minutes to let the flavors meld.

Prepare the Croutons

While the soup is simmering, preheat the oven to 350°F (175°C). Place the slices of bread on a baking sheet and toast in the oven for about 10 minutes or until golden brown.

Assemble the Soup

Ladle the soup into oven-safe bowls. Place a slice of toasted bread on top of each bowl, and cover generously with Gruyère cheese.

Broil the Soup

Place the bowls under the broiler for 3-5 minutes, or until the cheese is melted and bubbly. Keep a close eye to prevent burning.

Garnish and Serve

Remove from the oven and sprinkle with fresh parsley. Serve hot and enjoy!
