Method

Preparing the Steak

  1. 1

    Season the Steak

Sprinkle the salt and black pepper evenly over both sides of the ribeye steaks. Let them sit at room temperature for about 30 minutes to allow the seasoning to penetrate.

  2. 2

    Heat the Pan

In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until shimmering but not smoking.

  3. 3

    Sear the Steak

Add the seasoned ribeye steaks to the hot pan. Sear for 4-5 minutes on one side until a golden-brown crust forms.

  4. 4

    Flip and Add Flavor

Flip the steaks and add the crushed garlic cloves and fresh rosemary sprigs to the pan. Continue cooking for another 4-5 minutes for medium-rare doneness. Adjust the cooking time according to your preference.

  5. 5

    Rest the Steak

Remove the steaks from the pan and place them on a cutting board. Tent with foil and let rest for at least 5 minutes before slicing.

Preparing Optional Sides

  1. 6

    Prepare Asparagus

Trim the tough ends of the asparagus. Toss with olive oil, salt, and pepper. Roast in the oven at 400°F (200°C) for 10-15 minutes until tender.

  2. 7

    Bake Potatoes

Scrub the potatoes clean and pierce several times with a fork. Rub with olive oil and sprinkle with salt. Bake at 400°F (200°C) for about 45-60 minutes until tender.
