Calamari Preparation

    Prepare the Calamari

    Rinse the fresh calamari rings under cold water and pat them dry with paper towels. Ensure they are free from excess moisture.

    Make the Breading

    In a large mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to create the dry breading mixture.

    Prepare Egg Mixture

    In another bowl, whisk together the eggs and buttermilk until fully combined.

    Bread the Calamari

    Dip each calamari ring first into the egg mixture, allowing any excess to drip off, then coat it in the dry breading mixture. Shake off any excess flour and set aside on a plate.

Frying Calamari

    Heat Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Working in small batches, carefully add the breaded calamari rings to the hot oil. Fry for about 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pan.

    Drain and Serve

    Use a slotted spoon to remove the calamari and place them on a paper towel-lined plate to drain excess oil. Repeat with remaining calamari.

Marinara Sauce Preparation

    Cook the Marinara Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Spices

    Stir in the crushed tomatoes, oregano, basil, salt, and black pepper. Bring to a simmer and cook for about 15 minutes, stirring occasionally.

    Remove from heat and allow the marinara sauce to cool slightly before serving alongside the fried calamari.
