Preparing the Potatoes

Preheat the Oven
Preheat your oven to 400°F (200°C).

Cool and Cut Potatoes
Once baked, remove the potatoes from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise.

Scoop Out the Flesh
Using a spoon, carefully scoop out some of the potato flesh, leaving about 1/4 inch of potato on the skin.

Broil the Skins
Place the potato skins cut-side up on a baking sheet and broil in the oven for about 5-10 minutes, or until they are crispy and golden.

Add Toppings
Remove the skins from the oven and sprinkle shredded cheddar cheese and crumbled bacon generously into each skin.

Melt the Cheese
Return the loaded potato skins to the oven and bake for an additional 5 minutes, or until the cheese is melted.

Garnish and Serve
Remove from the oven and garnish with chopped green onions. Serve hot with a side of sour cream.
