    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Prepare Ramekins

    Grease four 6-ounce ramekins with 1 tablespoon of unsalted butter and dust them with cocoa powder. This helps the cakes to release easily after baking.

Making the Batter

    Melt Chocolate and Butter

    In a heatproof bowl, combine 200g of dark chocolate and 100g of unsalted butter. Melt them together over a double boiler or in the microwave in 30-second increments until smooth. Stir occasionally.

    Mix Eggs and Sugar

    In a separate bowl, whisk together 2 large eggs, 2 egg yolks, and 100g of granulated sugar until the mixture is pale and thick.

    Combine Mixtures

    Once the chocolate mixture has cooled slightly, stir in 1 teaspoon of vanilla extract and a pinch of salt. Gradually fold the chocolate mixture into the egg mixture until fully combined.

    Add Flour

    Sift in 50g of all-purpose flour and gently fold it into the batter until just combined.

Baking

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool Slightly

    Remove the ramekins from the oven and let them cool for about 1 minute.

Serving

    Invert and Serve

    Carefully run a knife around the edges of each ramekin, then invert onto a plate. Serve immediately, ideally with a scoop of vanilla ice cream or whipped cream.
