For the Calamari

Method

Preparing the Marinara Sauce

    Sauté Garlic

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic cloves (2) and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasoning

    Pour in the 14 oz canned crushed tomatoes, 1 tsp dried oregano, 1 tsp salt, 1 tsp black pepper, and 1 tsp red pepper flakes. Stir well.

    Simmer the Sauce

    Bring the sauce to a gentle simmer. Reduce heat to low and let it cook for about 15 minutes, stirring occasionally.

    Finish with Fresh Basil

    Stir in 1 tablespoon of chopped fresh basil just before serving. Set aside.

Preparing the Calamari

    Prepare the Calamari

    Rinse 1 pound of calamari rings under cold water and pat dry with paper towels.

    Make the Breading Mixture

    In a large bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp salt, 1 tsp black pepper, 1 tsp cayenne pepper, and 1 tsp garlic powder. Mix well.

    Coat the Calamari

    Soak the calamari rings in 1 cup of buttermilk for about 10 minutes. Then dredge each ring in the breading mixture until well coated.

    Heat the Oil

    In a large heavy-bottomed pot, heat 4 cups of vegetable oil to 375°F (190°C).

    Fry the Calamari

    Carefully add the breaded calamari to the hot oil in batches. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

    Serve

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
