Preparing Fried Plantains

Prepare the Plantains
Peel the ripe plantains and slice them diagonally into about 1 inch thick pieces.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot.

Fry the Plantains
Carefully add the sliced plantains to the hot oil in batches. Fry until golden brown on one side, about 3-4 minutes, then flip and fry the other side for another 3-4 minutes.

Drain and Season
Using a slotted spoon, remove the fried plantains from the oil and place them on a paper towel to drain excess oil. Sprinkle with salt and black pepper to taste.

Serve
Transfer the fried plantains to a serving bowl and serve warm with lime wedges on the side.
