Prepare the Patties
In a large bowl, combine ground sirloin with salt and black pepper. Mix until well combined and form into 4 equal patties, about 8 ounces each.

Add Cheese
In the last minute of cooking, place a slice of pepper jack cheese on each patty and close the grill lid to melt the cheese.

Toast the Buns
While the cheese is melting, toast the burger buns on the grill until lightly golden.

Assemble the Burger
Place each patty on the bottom half of the toasted bun. Top with a generous spoonful of red salsa and cover with the top half of the bun.
