Two flame-grilled 8-ounce ground sirloin patties served open-faced on Texas toast, topped with grilled ham, two fried eggs, American cheese and bacon, all nestled between a big serving of tots and fries, and then we cover the whole damn thing with our white sausage gravy.

    Prepare Tots and Fries

    Preheat your oven according to the package instructions for the tater tots and french fries. Spread them out on a baking sheet and cook until golden brown and crispy, about 20-25 minutes.

    Cook Bacon

    In a large skillet over medium heat, cook the bacon until crispy. Remove it from the skillet and let it drain on paper towels. Leave some bacon grease in the skillet for extra flavor.

    Grill Sirloin Patties

    Form the ground sirloin into two 8-ounce patties. Season with salt and pepper. In the same skillet with the remaining bacon grease, grill the patties over medium-high heat for about 4-5 minutes on each side or until they reach your desired doneness.

    Fry Eggs

    In another small skillet, fry the eggs sunny-side up or to your desired doneness. Season with salt and pepper.

    Assemble the Sandwich

    On a slice of Texas toast, place a grilled sirloin patty, followed by a slice of grilled ham, a slice of American cheese, and two slices of crispy bacon. Top with a fried egg, and then cover with another slice of Texas toast.

    Add Tots and Fries

    On the side, serve a generous helping of tater tots and fries.

    Cover with Gravy

    Finally, pour the warm sausage gravy generously over the entire open-faced sandwich and the sides of tots and fries.
