Prepare the Pork
Rub the pork shoulder with salt, black pepper, onion powder, and garlic powder. Heat olive oil in a large skillet over medium-high heat and sear the pork on all sides until browned.

Cook the Pork
Transfer the seared pork to a slow cooker. Add water and barbecue sauce. Cover and cook on low for 8 hours or until the pork is fork-tender.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred with two forks. Mix shredded pork with remaining barbecue sauce from the slow cooker.

Assemble the Sandwich
Place a generous portion of the pulled pork on one slice of griddled Texas toast. Top with jack cheese and cover with a second slice of toast.

Serve
Serve warm with extra barbecue sauce on the side if desired.
