    Cook the Bacon

    In a skillet over medium heat, cook the bacon strips until crispy. Remove from the pan and place on paper towels to drain excess fat.

    Toast the Bread

    In the same skillet, add a little butter and toast the Texas toast slices until golden brown on both sides. Remove from the skillet and set aside.

    Fry the Eggs

    In the same skillet, crack the eggs and cook them to your desired doneness. Season with salt and black pepper. Place a slice of American cheese on top of each egg during the last minute of cooking to melt.

    Assemble the Sandwich

    On one slice of toasted Texas toast, layer the lettuce, tomato (sliced), crispy bacon, and the fried eggs with melted cheese. Top with a slice of sweet red onion and finish with the second slice of toast.

    Serve

    Cut the sandwich in half and serve immediately while warm.
