Prepare the potatoes
Wash and peel the russet potatoes. Cut them into thin fries, approximately 1/4 inch thick. Rinse the cut fries in cold water to remove excess starch, then pat them dry with paper towels.

Heat the oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the potatoes
Carefully add the dried fries to the hot oil in batches, frying for about 5-7 minutes or until they are golden brown and crispy. Use a slotted spoon to transfer the fries to a plate lined with paper towels to drain excess oil.

Season the fries
While the fries are still hot, drizzle the truffle oil over them and toss to coat. Add the grated Parmesan cheese, salt, and black pepper, mixing until evenly distributed.

Serve
Serve the truffle Parmesan fries immediately with garlic aioli on the side for dipping.
