    Prepare the Parsnip Puree

    Peel and chop the parsnips into small pieces. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Blend Parsnips

    Add butter and heavy cream to the pot with the drained parsnips. Blend until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Cook the Steak

    Season the NY strip steaks with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the steaks and sear for 4-5 minutes on each side for medium-rare. Adjust cooking time based on desired doneness.

    Muddle Sage

    While the steak is cooking, in a small bowl, muddle the fresh sage leaves with lemon juice and a pinch of salt to release the flavors.

    Serve

    Plate the parsnip puree and place the steak on top. Drizzle the muddled sage mixture over the steak. If using, add the bone marrow on top of the steak for an extra indulgent touch.
