Preparation Steps

    Season and Sear Duck

    Preheat the oven to 350°F (175°C). Season duck thighs with salt and black pepper. In a large skillet, heat olive oil over medium-high heat and sear the duck thighs, skin-side down, until golden brown, about 6-8 minutes. Flip and sear the other side for another 4-5 minutes. Remove duck and set aside.

    Sauté Aromatics

    In the same skillet, add chopped shallots and minced garlic. Sauté until softened, about 2-3 minutes.

    Add Liquid and Herbs

    Stir in fresh thyme, orange juice, chicken broth, and orange zest. Bring to a simmer.

    Braise Duck

    Return the duck thighs to the skillet, skin-side up. Cover and transfer to the preheated oven. Braise for 1.5 hours until the meat is tender.

    Prepare Mashed Potatoes

    While the duck is braising, boil peeled and cubed potatoes until fork-tender. Drain and return to pot. Mash with butter and milk until creamy. Season with salt to taste.

    Cook Green Beans

    In a pot of boiling salted water, cook green beans for 4-5 minutes until bright green and tender-crisp. Drain and set aside.

    Once the duck is done, serve hot alongside mashed potatoes and green beans.
